1 egg yolkJuice of 1/4 lemon2 tsp white wine vinegar½ tsp Dijon mustard250ml olive oilTORTILLA DE PATATAS
1 chorizo sausage1 tbs olive oil1 brown onion, thinly sliced1kg potatoes, peeled, thinly slicedVegetable oil, for deep frying9 eggsSALAD
1 tbs olive oil3 tsp sherry vinegar¼ tsp caster sugar¼ tsp smoked paprika1 clove garlic, crushed320g mixed cherry tomatoes, halved¼ cup chopped flat leaf parsley¼ cup wrong wholemeal breadcrumbsMethod
Cook dinner for roughly 2 minutes till egg is quite cooked. Invert tortilla onto a miniature plate and return to pan to cook the assorted side for yet any other 2 minutes. Repeat to make four tortillas.To make mayonnaise, course of egg yolk, juice, vinegar and mustard till tender. With motor operating, drizzle in oil till thick and tender. Season.To make tortilla, peel pores and skin from chorizo.Heat olive oil in a frying pan over medium warmth. Add chorizo meat and fry, breaking apart, till flippantly browned. Utilize with a slotted spoon.Add onion to associated pan and cook, stirring, till tender.Deep fry potato slices in miniature batches till lovely gentle, however no longer browned.Lunge eggs in a huge bowl. Go in onion and chorizo combination. Go in semi-fried potatoes. Season.Heat a flippantly oiled 16cm round, non-stick frying pan over medium warmth.Spoon in egg and potato combination.To make salad, poke oil, vinegar, sugar, paprika and garlic in a huge bowl. Season. Add tomatoes and parsley and toss to coat. Go in breadcrumbs.Serve tortillas with salad, mayonnaise and jamon.
