Simplifying the cooking process and reducing how much heat I generate in your house is my main objective during the hot summer season.
Cooking outdoors not only cuts down on the heat inside, however it also provides me a nice change of surroundings while working. There’s something primal about cooking over fire (even a propane-fueled fire) that makes me feel very free and light-spirited.
Plan to drop in your fishmonger (or the seafood area) midweek to get the components for Friday night’s paella. And do not forget the white wine!
