You have all heard me extol the benefits of bone broths so now it’s time, as a recovering vegetarian, to return to my roots (pun planned!) and show you the benefits of veggie broths. Where bone broths energize, vegetable broths assist us to unwind. In these difficult times, all of us require a way to look after ourselves and nourish our brain, body and mind with foods that are easy to digest. Digestion requires relaxation because it is governed by the parasympathetic nerve system, which launches the enzymes juices and movement of digestion. This is among my preferred broths and it’s simple to make. I make it weekly as a stock for soups or a broth by itself to drink, considering that by the end of the week I have a tubful of vegetable ends and pieces of roots I didn’t use throughout the week. I place the carrot tops, ends of onions greens and other veggies I cut off when making salad, and put them in a container in the refrigerator up until I have enough to make this soup. You can change up the ingredients as you wish but always include celery, onions and parsley to provide lots of alkalinizing vegetables which relieve the soul. Include a clove of garlic and some sea salt
