Destined for a change, I bought this cookbook on a whim and started cooking a few recipes for him each week. All of the dishes in this book are scrumptious, fast, and most notably, healthy! We make every effort to stick to the Meatless Monday dishes, and hence far, he doesn’t even search for the meat in each meal!

I had just rarely seen a cookbook with many radiant reviews, especially for one with “slim” in the title. I have actually evaluated scores of cookbooks on Amazon and have bookshelves complete, like some do a reading library. But I must state, this is one of the most well-done I have personally ever seen myself. I can understand, now, the cult following it’s received.First, let’s discuss how “now” this cookbook is … by that I mean it has stepped out of old-fashioned cookbooks and how they have constantly been done, and considered today’s audience and what they may require. Numerous of us are on unique diets or have to entertain for a relative or guest who is and pull something together– whether that be gluten-free, vegetarian, something for a family who works during the day and needs crockpot meals, something for a family who works all the time and only wants to prepare on weekends and then freeze the meals … this book took that all into account. Beside each dish there is a color and letter coding-V for vegetarian, GF for gluten free, freezer friendly, crockpot and so on. And, for those of us who count calories and want to know nutrients or carbohydrates, it likewise has all that too! That spent some time, but boy is it handy, even if you yourself only use it occassionally.The photos are plentiful and throughout and professionally finished with excellent lighting that makes you wish to eat it. I have had a few cookbooks that really made me turned off to the meal due to the grey lighting and even ones I knew were phony like a slow cooker picture of mac and cheese that revealed it browned on top (that does not take place in a slow cooker). Not so for this one, it’s how the dish ends up and they make you wish to lick the page!But no cookbook is total without great dishes and this one sets the bar. You might honestly set down any of these meals in front of a family of boys who never diet plan in their lives and they will want seconds and thirds– the taste is fantastic! These are really restaurant quality meals, that are certainly tested and tried and refined. I have seen lots of recipes for fish tacos, for example, but the components here are absolutely different and more complete of taste. It’s also simple to substitute things for even more stringent diets.I LOVE that when the author finds brand names that work best in a dish, she also notes those.
