1 tbs olive oilprawn heads & shells (as under)1 onion, chopped1 carrot, chopped1 fennel, chopped2 fish heads2 bay leaves1 litre waterPAELLA

1 crimson capsicum1 inexperienced capsicum1 tbs olive oil10 rooster wings500g calamari rings3 cloves garlic, beaten200g beaten tomatoes1 tsp smoked paprika1 tsp dried thymePinch saffron threads200g bomba or calasparra rice50g fresh or frozen peas500ml fish stock12 inexperienced prawns (6 peeled, heads & shells reserved)2 blue swimmer crabs, cleaned, quartered8 mussels, cleaned300g clams, purgedMethod

To produce stock, heat oil in a colossal saucepan over medium heat. Add prawn heads and shells. Cook, lined, for about 5 minutes or till seafood is apt cooked and mussels and clams are start. Sprinkle with calamari. Exhaust away from heat and stand for 5 minutes.Garnish paella with parsley. Befriend with lemon wedges.
