Healthy environment news: Fava beans might replace soy

Tofu, soy milk and vegetable mince. More and more Danes are choosing to supplement or totally change their intake of animal-based proteins with plant-based proteins. Environment considerations become part of their thinking.
We often use soy-based protein when try out vegetarian cooking. However, brand-new research study from the University of Copenhagen’s Department of Food Science demonstrates that fava beans hold fantastic promise as a non-soy source of plant protein. Moreover, favas are a much better alternative for the environment:
” Numerous customers are sobbing out for alternatives to soy, a crop that places great stress on the environment. This prompted us to find a method of processing fava beans in such a way that enables us to produce a focused protein powder. Among the benefits of fava beans is that they can be grown here, in your area in Denmark. This is outstanding news for the climate,” explains Iben Lykke Petersen, an assistant teacher at the University of Copenhagen’s Department of Food Science, and among the researchers behind the new study released in the journal Foods.
