To the folks at The general public Science Lab at North Carolina State University, it’s a science experiment– and one that anyone can do at house with minimal materials. As NPR reports, researchers there are calling on the public to submit their sourdough sagas as part of a citizen science job.
Instead of utilizing yeast from a packet, sourdough bread is made with wild yeast gathered from the air. You can cultivate wild yeast in your home by integrating water and flour, leaving the mix in a warm area for a while, and “feeding” it with fresh flour and water on a regular basis.
