Barfis can be too sweet, but not this delicately flavoured one, to which almonds bring an additional dimension of creaminess. It’s simple to make however you do require persistence, which is rewarded with a gorgeous pudding.

800 ml entire milk.
A pinch of saffron.
Ghee, for greasing.
60 g granulated sugar.
1/4 tsp ground cardamom.
